Cerasuolo
Wine Name: Cerasuolo
Winery: Montali
Region: Abruzzo, Italy
Denomination: Cerasuolo d’Abruzzo Superiore DOP
Varietal: 100% Montepulciano d’Abruzzo
Tasting Notes:
This wine shines with a brilliant “cerasa” pink color. On the nose, it offers fresh fruit aromas, especially the crisp scent of cherries. The palate brings balanced acidity and minerality, showcasing structure and a refreshing finish.
Winemaking Process:
Hand-harvested in early October, the grapes are collected in small crates, then cooled for 16-24 hours before gentle destemming and pressing. The must is transferred to tanks for cold settling over 24 hours, then clarified and fermented at a controlled temperature of 14-15°C. Post-fermentation, the wine is aged on fine lees for several months with occasional bâtonnage, followed by bottle aging.
Perfect For:
This well-structured, mineral rosato pairs wonderfully with hearty pasta dishes such as carbonara or ragù, as well as traditional meat dishes with poultry, lamb, and pork. It also complements seafood, including shellfish, baked fish, and seafood pasta.
