This Dolcetto exhibits an intense ruby red color with violet reflections. The nose offers abundant hints of ripe fruit complemented by exotic notes. On the palate, it reveals a rich and consistent flavor, enhanced by the development of sweet tannins that contribute to its silky smooth texture.
Winemaking Process:
Dolcetto Costa Fiore comes from a vineyard planted about 50 years ago, with a southwest exposure that facilitates optimal grape maturation. The soil, of mycenic origin, is rich in white marl, providing a natural habitat for the vines. The yield is deliberately low (approximately 50 ql/ha), promoting longevity in the wine. After mid-September harvesting, the wine undergoes red vinification in thermorotating fermenters, followed by a one-year aging in stainless steel to maintain its freshness and fruit character.

This wine pairs excellently with rich pastas, grilled meats, and semi-aged cheeses. It has a rich history, having been appreciated as far back as the mid-1800s by King Vittorio Emanuele II.
