Tasting Notes:

The Pecorino presents a bright straw-yellow color. The nose opens with citrus aromas, hints of yellow-fleshed fruit, and subtle herbal notes, offering a well-rounded freshness. The palate is balanced, featuring a pleasant minerality and savory character that enhance the wine’s depth and complexity.

Winemaking Process:

The grapes are hand-harvested in the first ten days of September, collected in small 16-kg crates, and chilled in refrigerated rooms for 16-24 hours. Once cooled, the grapes are destemmed and softly pressed at low pressure. The must undergoes a 24-hour cold settling period, followed by a natural racking to remove sediments. Fermentation begins after inoculation, with the wine aged on fine lees in vitrified cement tanks for five months.
