Terre di Leone's Valpolicella Ripasso Classico Superiore presents an intense red color and exhibits both intense and delicate aromas. The palate is interesting, full-bodied, and persistent, with fruity notes derived from the appassimento (drying) process and the ripasso technique.

Winemaking Process:

This wine is produced using grapes that are hand-harvested in small 5 kg crates, followed by a drying process for about 100 days. The vinification involves ripasso, where the Valpolicella Classico Superiore undergoes refermentation on the unpressed grapes from the current year's Amarone. The wine is aged for approximately 22 months in 5 hl and 25 hl French oak tonneaux, followed by at least 10 months of bottle aging.
