Vespaiolo presents an intense straw yellow color with green reflections. It has a fruity aroma with notes of apple, wildflowers, acacia, and citrus. The flavor is dry and full, with a slight acidity and good aromatic persistence, making it a versatile pairing option.

Winemaking Process:

Vespaiolo grapes are hand-harvested in 10 kg crates to ensure quality selection. After soft pressing, the juice ferments at a controlled temperature of 18°C. The wine ages for about one month, with 60% in stainless steel tanks on fine lees and 40% in acacia barrels. Batonnage is performed twice weekly during barrel aging to enhance the wine's complexity.

Historically, Vespaiolo has played a significant role in the Vicenza region, dating back to the Tertiary Era, with regulations governing viticulture established as early as the late 1200s. The grape gained prominence under the Venetian Republic, recognized for its exceptional quality in historical accounts, contributing to the region's rich winemaking tradition.
